Supplì is a little rice croquette filled with rice and stringy mozzarella cheese originally from Rome to be enjoyed as an appetizing and inviting appetizer.

Ingredients for approximately 20 supplì
  • 500g Carnaroli rice;
  • 1.2 liter vegetable broth;
  • 300 ml tomato puree;
  • 1 knob of butter;
  • Parmesan Cheese;
  • Fiordilatte mozzarella;
For the breading
  • Water;
  • flour;
  • egg;
  • breadcrumbs
Preparation

Bring the broth with the tomato to the boil, add the rice and stir constantly to prevent it from sticking until all the liquid dries out. Add the butter and parmesan, mix well and place the mixture in a place to cool.

Prepare a batter with water, flour and egg.
Place a little rice in the palm of your hand, put a little mozzarella in the center and close tightly.
Dip first in the breadcrumbs then in the batter and again in the breadcrumbs and fry.
